Maple Spelt Pancake Cake
Is there anything that screams breakfast more than a stack of pancakes dripping with syrup? To me, pancakes are a special treat reserved only for the most leisurely of weekend breakfasts. I wanted to make a cake reminiscent of an easy, slow weekend morning, complete with pancakes, coffee, fruit, and syrup. This maple spelt pancake cake fits the bill perfectly. The cake has six layers of spelt cake sandwiched with maple coffee cream and blueberry compote. To finish the cake, we top it with more compote, fresh blueberries, and a big drizzle of maple syrup.
